Servings 2 8 oz jar
- 1 cup passion fruit puree 100% passion fruit
- 1 cup sugar
- 4 oz butter
- 6 each egg yolk large
Measure all the ingredients. Cube butter. Have saucepan, whisk, bowl, fine strainer, silicone spatula, and clean jars with lids ready.
Combine all ingredients in a saucepan and place over medium heat. Cook for a few minutes, whisking until the mixture thickens and starts simmering. Turn off the heat and continue whisking from time to time while the curd is cooling and produces steam.
Strain the curd into a bowl to remove unwanted egg solids. Pour strained curd into clean jars, close the lids, let cool to room temperature and refrigerate.
