Lilikoi Butter

  • 1 cup passion fruit puree 100% passion fruit
  • 1 cup sugar
  • 4 oz butter
  • 6 each egg yolk large


  • Measure all the ingredients. Cube butter. Have saucepan, whisk, bowl, fine strainer, silicone spatula, and clean jars with lids ready.
  • Combine all ingredients in a saucepan and place over medium heat. Cook for a few minutes, whisking until the mixture thickens and starts simmering. Turn off the heat and continue whisking from time to time while the curd is cooling and produces steam.
  • Strain the curd into a bowl to remove unwanted egg solids. Pour strained curd into clean jars, close the lids, let cool to room temperature and refrigerate.
