Plumcot Pies

for dough

  • 500 g wheat flour all-purpose
  • 2 tsp Saf Instant Yeast
  • 1/4 tsp kosher salt
  • 55 g sugar
  • 240 ml milk warm, 105F
  • 1 egg large

for eggwash

  • 1 egg yolk
  • 1 tbsp water cold

for filling

  • 4 plumcots
  • 8 tbsp brown sugar
  • 8 tsp butter


for dough

  • In a bowl, measure and mix with a whisk all dry ingredients — flour, yeast, sugar, and salt.
  • Add an egg and warm milk. Mix and knead the dough until smooth. It takes about 8 to 10 minutes by hand. This is 50 percent hydration dough, the easiest to work with.
  • Shape the dough into a ball. Place it into tree times larger bowl, cover with plastic wrap, and let the dough double in a warm place. It'll take about 1.5-2 hours. You can flatten it and keep refrigerated in a covered container for up to 48 hours.

to prep plumcots

  • Find the crease that goes down the stem of the plumcot. Using a sharp knife, make a cut along this crease all the way around your fruit. Make sure your cut is deep enough. Twist halves gently to separate them, and, just like with avocados, you'll see that the pit still attached to one of the halves. Use the tip of the knife to make a shallow cut around the pit and remove it with your fingers.
  • Slice plumcot halves 1/16" (1.6-2mm) thin.

for eggwash

  • In a small bowl, mix egg yolk and water with a silicone brush.

for baking

  • Divide the dough into 8 equal parts. Preheat the oven to 350F.
  • Roll each portion of the dough into 7.5" by 7.5" square. Make creases to divide the square to thirds. Roll the side thirds twice thinner than the center and slice them into 1/2" strips. Make sure you make symmetrical cuts.
  • Take sliced plumcot half and arrange it down the center. Sprinkle with 1 tbsp of brown sugar and top with thinly sliced butter. Sugar, butter and plumcot juices will transform into delicious caramel during the cooking. In addition to these basic ingredients, you can add your favorite ground spices, like cinnamon, star anise, clove, etc.
  • Connect the first strips on both sides to make a border.
  • Then, alternate other stripes over the top of the filling, forming a braid.
  • Brush with egg wash.
  • Repeat for the rest of the pies. Bake for about 20 to 25 minutes.
  • Glaze baked pies with plumcot caramel.
  • Let pies cool to room temperature and serve.
