  • 2 quarts milk FairLife, 2% or good tasting whole milk

Instructions

for crock pot

  • In a pot, slowly bring cold milk to simmer over medium heat, stirring. (This step prevents curdling of milk during the process of slow cooking.) Pour hot milk into the 3-quart insert of a crock pot. Cover with a lid and set on LOW. Do not disturb the milk or open the lid for another 8-12 hours.
  • Remove the skin from the top of the milk (either eat or discard it). Transfer the baked milk into a clean jar or bottle, let it cool to room temperature, and store refrigerated.

for pressure cooker Instant Pot

  • Pour cold milk into a stainless steel inner pot of a pressure cooker. (Make sure the amount of milk doesn't exceed the maximum level marking of the inner pot!) Close the lid and position the steam release handle to be sealed for pressure cooking.

  • Select Meat/Stew key function and press Adjust button to choose More for longer time cooking. The actual pressure cooking cycle takes about 2 hours. When finished, the cooker will beep and automatically go into the Auto "Keep Warm" Cycle, which will continue for up to 10 hours. You have an option to bottle your baked milk right after the pressure cooking cycle or let it slowly cook for up to 10 more hours.
  • Remove the skin from the top of the milk (either eat or discard it). Transfer the baked milk into a clean jar or bottle, let it cool to room temperature, and store refrigerated.
