Caviar Sauce — Cream of Ocean

  • 1 tbsp butter European-Style unsalted butter
  • 2 tbsp shallot diced
  • 1 tbsp Champagne vinegar
  • 1/2 cup Gewürztraminer
  • 1/2 cup dashi kombu + bonito broth
  • 1/2 cup heavy whipping cream
  • 4+ tsp caviar adjust to your taste and budget, the more the better
  • 1/2 tsp kosher salt adjust to your taste
  • 1/4 tsp black pepper crushed, adjust to your taste


  • In a saucepan, melt a tablespoon of butter over medium heat. Add shallots and sweat for a couple of minutes, without browning.
  • Add champagne vinegar and let it almost evaporate. Add wine, dashi, crushed pepper and reduce until syrupy. Strain and return back to the pan.
  • Add cream and bring to simmer, stirring. Turn off the heat and season with salt, adjut to you taste. Keep warm until ready to serve. Add caviar right before seving.
