Цвіклі (pol. ćwikła) is a hot beets appetizer in Poland and Western Ukraine. It is made with boiled or steamed beets, grated, seasoned, and mixed with some horseradish and spices. The level of heat and the list of ingredients vary from region to region and from family to family. Besides all kinds of vinegar, the acidic elements range from lemon juice to dry red wine. Just make Tsvikli to your taste! Similar salads are known in German cuisine as Salatrüben или Rote-Bete-Meerrettich.

Ну хорошо, а что у нас в Техасе? Готовим молодую свеклу на пару 15 минут. Даем чуть остыть и снимаем пальчиками кожицу как перчатку. Натираем свеклу на терке. И потом легким движением руки открываем две замечательные баночки — Alessi Roasted Garlic Spread  и Robert Rothschild Farm Onion Blossom Horseradish Dip. Добавляем по вкусу того и другого, соль, свеже смолотый черный перец и перемешиваем. И на ломтик свежего хлеба!

Если у вас нет готового чесночного пюре, его легко приготовить дома. Хотите помедитировать — почистите пару головок чеснока сами. Нет — купите коробочку очищенного.

When in Texas, during the season, this appetizer is easy to make with steamed young beets and some store-bought condiments, made locally. Look for creamy horseradish sauces or dips to season your grated Tsvikli. Tsvikli pairs well with ham, roast beef, well, with most meat and fish dishes. It’s a great addition to sandwiches with cold meat. It can also be a perfect vegan appetizer served on a slice of freshly-baked crusty sourdough.

Ingredients

  • 4 each red beets young, whole, fresh

  • 2 tbsp Robert Rothschild Farm Onion Blossom Horseradish Dip
  • 2 tsp Alessi Roasted Garlic Spread
  • 1 tsp smoked salt
  • 0.5 tsp black pepper freshly ground

Instructions

  • Clean and trim the beets. In a pot with lid, bring one cup of water to boiling. Place a steaming basket with beets inside, cover, and steam for 15 minutes.
    Instant Pot instructions. Clean and trim the beets. Place them into the Instant Pot insert in a steaming basket and add 2 cups of water. Pressure steam them manually for 7 minutes with natural release.

  • Let cooked beets cool down to room temperature. To avoid staining your hands while removing the skin of the beets, wear disposable gloves. Using your fingertips, rub the skin off.

  • Grate the beets.

  • Season grated beets with salt and freshly ground black pepper to your taste. Add some of your favorite creamy horseradish dip or sauce to your taste. I also like adding some sweet and pungent roasted garlic puree. Mix well and store refrigerated until ready to serve.
