Pincho, or pinchito, means “little thorn” or “little skewer,” so pincho moruno roughly translates as Moorish kabobs and is a typical tapa of the Spanish autonomous communities of Andalusia and Extremadura. Being Muslims, the Moors made similar dishes with lamb. Christian Spain took their traditional spice mixes and applied to preferred chicken and pork. Pinchitos are often served with bread, wedges of lemon, and wine. Usually, these skewers are made during the barbecue season. Steps 5 nd 6 of this recipe show how to make this delicious appetizer using the convenience of your indoor kitchen, rain or shine.

Tapas: Pinchos Morunos | Moorish Skewers
Servings: 4 6" skewers
- 1 1/2 tsp cumin seeds to grind
- 3/4 tsp coriander seeds to grind
- 1/3 tsp black pepper corns to grind
- 1/2 tsp kosher salt to grind
- 2 tbsp olive oil extra virgin
- 1 tbsp lemon juice
- 1 tsp honey
- 1 clove garlic
- 1 1/2 tsp paprika sweet smoked, Spanish
- 1 tsp oregano fresh, chopped
- 1/2 tsp turmeric powder
- 1/3 tsp Espelette pepper crushed
- 1/2 lb pork tenderloin (or boneless and skinless chicken thighs)
Using mortar and pestle, combine and grind cumin and coriander seeds, black peppercorns, and salt.
In a Zip-lock bag, mix oil, lemon juice, garlic, and ground spices. Add the pork cubes and mix until all the pork is coated.
Marinade for at least 30 minutes at room temperature or up to 3 hours in the refrigerator.
Soak the wooden skewers in cold water for at least 30 minutes.
When ready to cook, preheat your broil/salamander and arrange the rack so skewers are 4” below the heating element. Make skewers and arrange them on the lined with foil baking sheet.
Broil them turning once, 2 to 3 minutes per side. Adjust cooking time according to the heat of your broil.
Serve the skewers with lemon vedges and bread, hot or warm.
