Delicately dehydrated (aka sun-dried) tomatoes are extremely popular as a vegetarian snack, appetizer, or a dish element for many reasons. First of all, they add a concentrated flavor of fully ripe tomato to the dishes. They are sweet and tangy, light in calories and with an intense aroma. Now, imagine adding some campfire-like tasting notes to sun-dried tomatoes! It takes 10 minutes using Cameron’s stovetop smoker. Keep smoked tomatoes refrigerated in a jar and serve them on grilled bread rubbed with garlic, or on top of pasta and rice dishes, or add them to your favorite sauces and salsas. Enjoy the summer!
Years ago, I discovered foraged ramps in the U.S. though available only matured, expensive, and very difficult to find. Unfortunately, matured ramps cannot substitute cheremsha, which is ramp sprouts from Kavkaz mountains. But flowering leeks can! Cooked the same way, I consider succulent stems of flowering leeks the second best. The recipe below is exactly how we prepared ramp sprouts in our family — simple and delicious. It works for the flowering leeks to the letter.
I kept this recipe unpublished for so long because it is part of my favorite party trick. I let my guests taste the ice cream and ask them to name four ingredients they think were used to make it. I hear all kind of answers — caramel, toffee, some say vanilla bean seeds because they see tiny black dots, etc. Everybody is genuinely surprised when I name them — milk, sugar, eggs, and butter.

My recipe is intended to show how to broil bulgogi. Broiling allows making large portions of meat to serve at the same time without mess and hassle. This salsa is one of my favorite. I like seafood, and it’s perfect with many seafood dishes as a side. It’s beautiful! Bright, sunny colors of fresh tropical fruit. It tastes like vacation in Hawaii, if, of course, you come across excellent ripe golden pineapples and Ataulfo mango. This salsa is easy to make — all its ingredients are raw, but you have to know smart ways to cut, slice, and dice pineapple and mango to enjoy the process of making it. When you do, you can make this salsa quickly and impress your guests with a presentation.
I prefer slowly cooked beef shanks for plain khashlama and leg of lamb for festive version. A slow cooker/crock pot is the most convenient device to make this dish. Otherwise, assemble vegetables and meat layers in an iron pot, start on the stove to bring water to boiling and finish in the 300F oven by slowly cooking for another 3-4 hours. There is also a version when meat is cooked first; then it is layered with vegetables in small ceramic or clay pots and cooked in the oven to serve khashlama individually portioned. In this case, it only takes 1-1.5 hours in the oven — just to cook vegetables.
Tortilla soup is one of the most popular Mexican soups. Google it, and you can easily get tons of “classic” recipes and even more variations. The base is always the same — dry red chili peppers, tomatoes, onions, garlic, tortilla chips, cilantro, and lime. In some recipes tortilla chips are used to thicken the soup, in other, they are the topping. In central Mexico, this soup flavor is defined by pungent and tangy thin fleshed pasilla, in Michoacan region it’s a fruity and mild ancho, in Puebla a smokey chipotle takes the place. There are also a variety of additional toppings from cooked meat and poultry to avocado, cheese, and cream. Every local chef or home cook features the best regional ingredients in this soup. I often joke comparing tortilla soup in Mexican cuisine to borsch in Ukrainian.
It’s raining, it’s gloomy and dark, perfect weather to eat a bowl of steamy hot Pho Bo — to warm your soul, to wake up your tastebuds! Last year, I made my the first and the best Pho at home, because it was 100% to my taste. I also managed to adjust the recipe logistics to a busy lifestyle. In other words, no need to stay hours in the kitchen to enjoy a bowl of good Pho Bo at home.
