This season, I’m all about bite-sized appetizers

This season, I’m all about bite-sized apps that pack in protein but don’t stress me out. My rule: keep it easy—one quick trip to the store, throw some stuff together, and enjoy. Fewer carbs, more flavor, no fuss.

I tested a bunch of ideas after a single run to the south location @CentralMarket. Honestly, a few bites disappeared before I could even snap a pic!

tiny appetizers — December 2024
Clockwise, from the bottom: smoked salmon and creme fraiche, duck liver mousse, melted brie and pear confit, broiled pear with roquefort and prosciutto, beef tartare

Here’s what I tried out:

  • Lightly smoked salmon with French crème fraîche, capers, and a sprinkle of fennel fronds.

  • Gently melted Brie topped with pear confit flavored with white wine, and fresh thyme.

  • Duck liver mousse with a delicate layer of wine aspic.

  • Crostini with broiled pear (I have to show you this prep! Super cool!), Roquefort, and a few little rolls of prosciutto.

  • My personal fave: beef tartare served on a crunchy bresaola “chip.”

FYI Austin falks, @CentralMarket sells tenderloin tips at a decent price—way better than full-blown chateaubriand—so it’s perfect for making fresh tartare. Just season it your way and enjoy pure, bite-sized bliss.

This holiday season, ditch complicated. Go bold, go easy, and let every flavor sing on its own!
