Торт “Графские развалины”

Домашний торт из советского прошлого внезапно всплыл в памяти пару месяцев назад. Взбитые с сахаром белки отсаживали ложкой на противень и высушивали как безе — карамельно сухонькие снаружи и чуть влажные внутри меренги. Потом эти нежные хрустящие комочки складывали горкой, перемежая очень простым кремом из сгущенки взбитой со сливочным маслом. Крем выкладывали тоже ложкой. Торт охлаждали в холодильнике до затвердения масляного крема и беспорядочно поливали струйкой растопленного шоколада, тоже из ложки. Все очень просто. Доступные дешевые ингредиенты, элементарная кухонная утварь, базовые кондитерские навыки – и у нас шикарный торт с разнообразимем текстур и вкусов! Ну… Да, это “развалины,” но зато Графские!

Messy Love

Last December, this cake became one of two the most often oredered cakes for birthdays, Christmas dinners, and New Year’s Eve parties. I shared winter-themed meringues on Facebook just in time for the new Disney’s Frozen, and the cake became popular.

With Valentine’s Day coming, I was thinking about some of my friends who recently lost their loved ones. How fragile love, life, our hearts are.

Love is messy – хрупкие меренговые сердца держатся на тающем на губах ореховом креме. Я использую два типа ореховых паст — hazelnut paste for pink buttercream and pistachio for green one. Love drives us nuts, but it’s all we need.

If you don’t care for the meringfue cake, below is a picture with meringue pastries.  They taste excatly like I remember those I liked in my youth — советкие пирожные безе, just heart-shaped and pink. I Russian, we call heartbreakers (fr. L’arnacoeur) сердцеедами и сердцеедками (or lit. heart eaters). So, these pastries should give you that kind of power!

Ingredients

for meringues

  • 150 g egg whites
  • 225 g sugar fine
  • 1 tsp dry egg whites

for cream

  • 200 g milk
  • 50 g sugar
  • 1 vanilla bean seeds
  • 2 egg yolk
  • 25 g corn starch
  • 227 g butter
  • 56 g hazelnut praline
  • 2 tbsp cognac

Instructions

for meringues

  • Preheat oven to 250F/120C, convection mode. Line two half-size baking sheets with parchment paper or silicone mats. Prepare as many pastry bags with piping tips as the number of shapes you want to pipe. Recommended piping tips are closed and opened starts. Their size depends on the size of the meringues you plan to pipe.
  • Mix liquid and dry egg whites and sugar in a bowl of a stand mixer. Whip a medium-stiff meringue. If using coloring gels, add a few drops of the desired color.
  • Pipe the meringue making 2-3 shapes — hearts, roses, etc. Bake for 1 - 1.5 hours, depending on the size of the meringues you piped.
  • Using pastry spatula, carefully remove the meringues from the parchment paper or silicone mat. Cool meringues on a wire rack down to room temperature. Store in an airtight container until ready to use.

for cream

  • Mix the first five ingredients and cook a thick pastry cream.
  • Whip room temperature butter, praline, and pastry cream. Add cognac and whip. Fill a pastry bag with a star piping tip with cream and keep at room temperature when ready to assemble the cake. (Note, it's a buttercream. It will harden when refrigerated for a long time, and it will make it impossible to pipe without re-whipping it again. If making this cream in advance, keep it stored in a container, not a piping bag.)

for assembly

  • Alternate meringues and piped room-temperature cream. Decorate with the best looking meringues.
