Golden Cauliflower Trees
Servings: 2 portions
- 1 cauliflower D 5-6"
- 2 tbsp melted butter
- 1 pinch kosher salt
Place cauliflower stem up. Remove all the leaves.
Make vertical cuts around the stem, separating larger florets.
The thiner the stem, the smaller the florets. Cut them off from the top of the stem and separate by hand.
When separating florets, make sure each one or their clusters are uniform in size, so they will cook in the same amount of time .
To achieve golden caramelization we need flat surface. Cut each large floret or cluster of smaller florets in half.
Place butter on a cold skillet and melt it on medium heat. Place cauliflower florets flat side down, in one layer, sprinkle with salt, and cook until golden brown for about 10-15 minutes.
