Some Hawaiian food bloggers swear lilikoi (passion fruit) butter is something they remember having in the fridge always, like a staple, like POG, the Hawaiian fruit trio (passion fruit + orange + guava). I discovered it only a few years ago. Since then, I took home a generous amount of lilikoi butter to indulge my memories of a good time on the islands. A week ago, when the last jar was finished, an idea to make my version of this delicacy came to my mind for the first time.

The Recipe Is Ridiculously Simple

Finding passion fruit puree is not, notably, during the C19 madness. My favorite French Boiron fruit purees are more and more expensive, absurdly expensive. It’s time to explore other brands and other sources.  Look around. If you are lucky to find a 100% passion fruit puree, no sugar added, no other fruit blended in, make this fantastic curd!

All you need is 4 ingredients — passion fruit puree, sugar, eggs, and butter. The better are your ingredients, the better will your lilikoi butter taste; the cleaner will be the flavors, the silkier and creamier will be the texture. Different recipes use different ratios of the ingredients and often whole eggs. My version is adjusted to my taste, so I use less sugar, less butter, and only egg yolks.

Tools and Cooking Method

If you have a round-bottom saucepan and a whisk, your job making this condiment will be easier. There is no need for bain-marie or thermometers — just whisk the mixture while cooking. The emulsion is stable enough to bring it to simmer.

What If Passion Fruit Is Out of Reach

Lilikoi butter is a curd. The concept is the same as for well-known lemon curd or any other curds made with bold-flavored fruits — mostly all kinds of citrus, but also raspberry, blackberry, cranberry, black currant, etc. The recipe below is universal, but different kinds of fruit will require different amounts of sugar. In some cases, no need to add sugar at all. The rule is to make the fruity part taste pleasant to your taste first, then add other ingredients and start cooking.

Remember, you are going to dilute, to soften the fruit flavor of your choice with egg yolks and butter. The more delicate it is before yolks and butter, the less it will be recognized in the final product.

Serving Lilikoi Butter

  • Serve it with a slice of fresh bread made with enriched dough — Hawaiian bread, brioche, chalah, milk bread, etc.
  • Add lilikoi butter to your plain yogurt or drizzle it over fresh cheese like ricotta or chevre.
  • Use it as a dressing for your tropical or not so tropical fruit salads.
  • Make meringue pastries with whipped cream and lilikoi butter.

Ingredients

  • 1 cup passion fruit puree 100% passion fruit
  • 1 cup sugar
  • 4 oz butter
  • 6 each egg yolk large

Instructions

  • Measure all the ingredients. Cube butter. Have saucepan, whisk, bowl, fine strainer, silicone spatula, and clean jars with lids ready.
  • Combine all ingredients in a saucepan and place over medium heat. Cook for a few minutes, whisking until the mixture thickens and starts simmering. Turn off the heat and continue whisking from time to time while the curd is cooling and produces steam.
  • Strain the curd into a bowl to remove unwanted egg solids. Pour strained curd into clean jars, close the lids, let cool to room temperature and refrigerate.
